Organic Viili Yoghurt Starter Culture: The Ultimate Guide

What is Organic Viili Yoghurt Starter Culture?

Our organic viili yoghurt starter culture originates from Scandinavia and is a mesophilic yoghurt, meaning it can be cultured at room temperature. We proudly stock all three varieties of organic viili yoghurt starter.

Rich in Beneficial Bacteria

Organic viili yoghurt is a powerhouse of probiotics, with over 15 strains of bacteria and yeasts, making it one of the most active yoghurts available. While milk kefir remains the top source of beneficial bacteria, organic viili yoghurt starter culture is a close second.

Easy to Prepare at Home

The unique ability of viili to ferment at room temperature makes it an incredibly convenient yoghurt to prepare at home. Simply combine milk with our organic viili yoghurt starter culture, and let the natural fermentation process do the rest.

Varieties of Organic Viili Yoghurt Starter Culture

Long Strain Viili Yoghurt

Our long strain organic viili yoghurt creates a distinctive, slime-like yoghurt that is quick to ferment. This variety is particularly fun to make and eat, thanks to its unique texture. The sliminess is due to Lactococcus lactis subsp. cremoris, a specific strain of bacteria.

Short Strain Viili Yoghurt

For those who prefer a more traditional texture, our short strain organic viili yoghurt is the perfect choice. This variety lacks Lactococcus lactis subsp. cremoris, resulting in a smoother consistency similar to supermarket yoghurt, but with the same great taste of viili.

Traditional Viili Yoghurt

Our traditional organic viili yoghurt features the surface-growing yeast-like fungus Geotrichum candidum, which also appears in cheeses like brie and camembert. This strain gives viili its characteristic nutty, cheese-like flavor and thicker consistency. We continue the tradition of culturing viili in unhomogenized milk, preserving its authentic quality.

The Benefits of Organic Viili Yoghurt

  1. Probiotic Rich: Viili yoghurt is rich in probiotics, promoting a healthy gut flora.
  2. Easy Digestion: The fermentation process breaks down lactose, making it easier to digest.
  3. Immune Support: Regular consumption of probiotics can boost your immune system.

Failed to culture

Not sure if I did something wrong. I followed the instructions on the website. Boiled the milk first, not sure if I was meant to boil for a specific length of time. Allowed the milk to cool to room temperature and then added the culture. Not sure if I should I mixed the culture better, I just swirled it around in the large culture jar. I left it for 72 hours on a mixture of warm days >20 degrees and days slightly below 20 degrees, and the milk was still liquid, and hadn't thickened at all. I have cultured Villi in the past (It died whilst I was on holiday, I should have frozen it), so I know the yogurt doesn't get that thick, but it gets thicker than milk. So I was disappointed this culture didn't work.

Great stuff authentic

I lived for some time in Finland, and whilst there became rather besotted by Viili. This starter has worked really well and I am currently on re-culture 14, and still lovely stretchy and stringy. I brought the long stain kind.
