Viennese kombucha is a fermented living probiotic drink which originates from Vienna, the capital of Austria. This variety differs because it has been adopted to brew Kombucha using Darjeeling tea. This changed the bacterial makeup completely for the kombucha scoby originally used. Creating this unique heirloom variety.

The organic Viennese kombucha scoby ferments very slowly. This leads us to believe it has only recently been adopted to work with darjeeling tea. It brews a delicious, fruity tasting kombucha with the added health benefits that come from drinking darjeeling tea. In a very short space of time, viennese kombucha has become our personal favourite here at Freshly Fermented. We absolutely love it!

We are proud to have the organic Viennese kombucha scoby in our collection. It is no more difficult to work with than normal Kombucha. We find the organic Viennese kombucha scoby grows slower than a traditional kombucha scoby and can take an extra few days to ferment.

What is Darjeeling tea?

Darjeeling in north east India isn’t easy to get too. Even the famous antique train has to wind its way carefully through valleys and around mountains to get there. But the cup of golden darjeeling tea once you arrive makes it all worthwhile.  It’s known as the champagne of teas and we definitely think it’s a reason to celebrate. The combination of first & second flush teas in this blend gives a beautiful, unique & delicate flavour.

Size variations explained:

Starter tea is the most important part of the process of making kombucha. You always need a minimum of 10% starter tea for the total volume of kombucha being made. We offer a range of brewing sizes which all come with the required amount of starter tea to successfully and safely make kombucha at home. We also offer misfit organic kombucha scoby. These are scoby that have not quite formed perfectly. The shape of the scoby has no impact on the kombucha brewed with it. We offer these scoby at a discounted price rather than let them go to waste.
